Starting with the commit 3fbd4338846e ("luci-mod-network: interfaces: restructure DHCPv6 and IPv6 RA options") LuCI shows DHCP Server which I believe should not be displayed for wireguard.

This is actually intentional and related to the openwrt/luci#2998

If you check what options are available there, you'll see it doesn't actually allow setting up a DHCP server.
